Easy Chicken Marinade For Grilled Chicken Tacos

This easy marinade for grilled chicken tacos is perfect for a fun picnic in the park on a warm summer day. We were able to use our portable grill and make some amazing tacos before going home to enjoy a great movie as a family with some homemade red, white, and blue popcorn balls.

This marinade for grilled chicken is easy to make, and will add amazing flavor to your grilled chicken. You will love how simple this is!

There are many times when I complain about the crazy weather here in Colorado. One minute it is rainy, the next minute it is sunny, and later in the afternoon it can be so windy! Not to mention all of the snow that we get in the winter! All that said, Colorado is a beautiful place to live with easy access to the mountains, clean and fresh air, and great neighbors. So when the weather does decide to cooperate, we love to get out as a family to have a great picnic in the fresh air with delicious food.

A few weekends ago we got one of those crazy days – in the morning it had been raining, so we weren’t sure if we were going to be able to do anything outside. By around 11:00 AM, however, the clouds had dispersed and the sun was out in full force. We decided to take advantage of it to head to one of our favorite picnic spots that is only a few minutes from our home. While this spot is not exactly in the mountains, it has that mountain feel with lots of pretty trees and a cool fresh water stream where we can cool off.

Since we planned this without too much anticipation, we had to decide what we wanted to take to eat. My husband just got a portable grill for his birthday this year, and he was really anxious to try it out, so we decided we would make something on the grill. Being from Mexico, I love tacos, so we decided to make grilled chicken tacos. They turned out absolutely delicious, and were so easy to take with us and to cook in no time at all.

When I make anything, I love to make sure that it has lots of flavor, so even though we didn’t have much time I decided to come up with a quick, easy marinade to put the chicken in. Since I needed somewhere to put the chicken while it marinated, and because we didn’t have a lot of time, I decided to use one of my favorite kitchen products – Glad sandwich bags. They are the perfect size for putting in one or two pieces of chicken with the marinade, before sealing them and putting them in the cooler to take on our picnic.

When my kids saw these particular Glad sandwich and snack bags, they were thrilled, because they have some of their favorite movie characters on them! I bought them at King Soopers, which is a member of the Kroger family of stores here in Colorado.

My kids begged me to put the fruits and vegetables that we were taking on our picnic in them too! Of course I obliged, and they couldn’t stop talking about them the whole time. While it is not quite time yet for back to school, now is a perfect time to stock up on the Glad sandwich and snack bags with your kids’ favorite characters on them so that they will be excited when school time does roll back around!

For the grilled tacos, we took the chicken, some corn tortillas, an onion, lettuce, cheese, and hot sauce. We wrapped the onion and the tortillas in aluminum foil and cooked them over the portable grill too and when the chicken was done, all we had to do was take it off the grill and cut it into strips to make the tacos.

We also decided to take some grapes, carrots, celery, and potato chips, all of which fit perfectly in the branded Glad snack bags that I mentioned above. We also brought these convenient Hidden Valley Ranch to-go cups, which were perfect for dipping the carrots (my husband likes ranch on his tacos, so it was convenient for him to be able to pour some on his tacos too!)  You can find these at King Soopers as well, in the salad dressing section.

After we ate, we went for a walk along the trail before finally getting back in our car to make the short trip home.

Since movies were on our minds, when we got home we decided to sit down as a family and enjoy these red, white, and blue popcorn balls while watching one of our favorite movies. They were a perfect snack to enjoy while spending time as a family and making great memories. You can find the specific instructions on how to make them here.

All in all we had a great time together, and we were so glad that the weather cooperated with us. I just love making memories with my two little boys and my husband, and we look forward to many more fun weekends like this one.

Easy Chicken Marinade For Grilled Chicken Tacos

Ingredients

  • 1 Cup of Orange Juice
  • 1/2 Cup of Worcestershire Sauce
  • 1/4 Cup of Soy Sauce
  • 2 Tablespoons of White Vinegar

Instructions

  • Add all of the ingredients to a bowl and whisk together.
  • Season the chicken breasts with salt, pepper, garlic powder, onion powder, paprika, and cumin.
  • Add the marinade to a large plastic bag or small individual bags and add the chicken until ready to cook.
