I’m not joking when I tell you that there are few things that stress me out more than having a messy kitchen. I just can’t stand it. The kitchen is supposed to be a place of inspiration where I come up with delicious recipes, so I need it to be clean.

That is why I love this recipe. All you need is a knife, a sheet pan, and a small pot (to boil the potatoes) so it doesn’t make a big mess!

I don’t know about you, but I love all types of roasted vegetables. Potatoes are one of my family’s favorites, but corn, cauliflower, broccoli, and tomatoes are popular too. My family has loved this recipe ever since the first time I made it, and we try to have it (or some variation) at least once a week.

Not only is it delicious and easy to clean up, but it is a great way to try out the new, popular “sheet pan” method of making food with only one pan. One of my favorite kitchen “tools” is my slow cooker. It definitely makes it easier to make some great meals. That said, I love this new method as well because it makes preparation and cleanup so much easier!

It is so easy to just add the fresh vegetables to the sheet pan and season them along with the flank steak and then letting them all cook together. You will be surprised how delicious it is!

This recipe is simple, fast, and family-approved. The combination of finely chopped garlic, salt, pepper, and cumin give it amazing flavor.

After putting everything on a pan (I really like this one that I have been using) and seasoning it, all you have to do is throw it in the oven and it is ready in 30 minutes (including the time it takes to boil the potatoes). This is just one idea, so feel free to modify it to make it perfect for you and your family.

For example, the other day, I made this with just the flank steak and some sliced potatoes. I drizzled some avocado oil over it and seasoned it, and it turned out amazing!

Ingredients

  • 2 Pounds of Flank Steak
  • 2 Pounds of Small Red Potatoes
  • 2 Cups of Broccoli
  • 1 Medium Onion sliced
  • 1 Red Pepper cut into cubes
  • 4 Cloves of Garlic finely chopped
  • 1/4 cup of Olive Oil
  • 1-2 Tablespoons of ground cumin
  • 1 Tablespoon of dried oregano
  • Salt and Pepper to taste

Instructions

  • Preheat your oven to "high" in broil mode.
  • Add cooking spray (or olive oil) to sheet pan.
  • Separately boil the potatoes with salt for 20 minutes.
  • In a large bowl, combine 2 cloves of garlic, the olive oil, the cumin, the oregano, and salt and pepper. Mix well and add the broccoli, the onions, the red pepper and boiled potatoes and then add to the sheet pan.
  • Season the flank steak with pepper, salt, and the rest of the garlic, and cut into thin slices and add to the sheet pan.
  • Put the sheet pan with all of the ingredients in the broiler for 5 - 7 minutes and then flip the meat and continue cooking on broil for 5 - 7 more minutes until cooked to your desired level of doneness.

Only had red potatoes so I cut them and boiled for 12 minutes. Used Fajita seasoning and olive oil on all. Added garlic and tossed vegs for last 8 minutes. Flank steak, green/orange/red peppers, red onion, cherry tomatoes and broccoli. Broiled on high for 35 minutes middle rack. Turned out GREAT!

I used 1.5# potatoes and I think 1# would be enough. I could’ve imagine using 2#. The potatoes overwhelmed the dish. I couldn’t fit any more food on my XL size cookie sheet if I wanted to.

Everyone actually liked it no leftovers used a New York strip steak couldn’t find the steak that it called for ,I also added green beans because my Mom doesn’t care for broccoli

I mixed all the ingredients in the roasting pan so had one less bowl to clean. Used olive oil in the pan. Subbed quartered brussel sprouts & baby carrots. Instead of cumin (next time) I used dried homegrown oregano & basil. Lightly dusted with Herbs du Provence. Added black garlic inside of Hasselbeck-prepped red potatoes. Omg - Iove your recipe & it just makes the mind wander to all the possibilities! Found 5min a side yielded the absolute best rare steak!
