I cook some chicken breast with garlic, salt, pepper, onion and celery to get the strong taste of the chicken out. when done, I shred the chicken and cook with a little bit of oil, add salt, pepper, little bits of onion, bell pepper and tomatoes when done I set aside for cooling and I start with the tomato sauce for the entomatadas, the way I do them at home.
I use can tomato sauce mixed with garlic powder, knorr. pepper, cumin then wisk the ingredients and set aside for the moment. on a frying pan, I put a little bit of oil and start dipping the corn tortilla in the set aside sauce mix (coat on both sides then I transfer to frying pan and also coat in the oil on both si then take out and place on big plater where I then put a small amount of the fixed chicken and add some cheese (either mozarrela or plain white or Colby) then roll the corn tortilla and start the process again till I get maybe 10 or 12 roll ups and keep on until I get a couple of more then start serving with Mexican rice and some refried beans. you can also serve with a salad or homemade fries. then enjoy!!
