This is my first time making huevos rancheros and it was so good! Will definitely be on repeat at my house. My husband loved them too. Got the eggs nice and runny! I also added some fresh tomato and avocado on the side.

I make my huevos rancheros without the beans, potatos and ham. Simply two eggs sunny side up top with a spicy tomato sauce. Today, however, I added some avocado chunks since I happened to have a nice ripe one and it made the dish supurb. I’ll never have this dish without avocado again.
