@James B yep, works every time. I’ve been doing this for many years.

Citric acid can also be used but in much smaller amount. It’s easy to overdo citric acid.

I would choose ascorbic acid over the citric if I have it on hand.

@Sam, I have heard of packing the guacamole down and smoothing it out and adding a small layer of cold water on top. Just drain it drain it before serving and stir up.

I made your guacamole tonight to go with tacos. I had saved the recipe and finally made it. Going to delete all my other guacamole recipes. Loved it !!! I will be making only yours.
