@Art, I don’t know if they’ll have it where you are, but my local Walmart Supercenter carries Rhumba brand meats in stock and they have lengua, cheek meat, tripas, honeycomb tripe, and oxtail as well. Maybe give it a look.

Rumba does not have anything in stock. Thankfully there is a good Mexican store near me that cares tongue. They also have chicken feet which is an interesting treat too.

I agree, I have only seen it done in a green tomatillo sauce. Sure I might enjoy the red sauce when I try it.

I’ve never personally seen lengua tacos made with salsa roja. It’s always been salsa verde in my experience.
This recipe is more like the traditional way from Back On my Block, off the taco trucks. I do them in the crockpot, myself. 🙂
