Today I am going to share with you a great quick recipe for some strawberry cream cupcakes. They are delicious, but the more important part of this post is to raise awareness of Breast Cancer and KitchenAid’s 10,000 cupcake challenge. With the political season in full swing, it seems like there are arguments going on everywhere about what is best for our country. Sometimes this can get really old, really fast. That said, with so much argument going on, there is one thing that I think we all can agree on – cancer is a horrible disease and we need to find a cure! I know so many people who have been affected by different forms of cancer, and it is so sad. That is one of the reasons why I want to share about a great cause that is being put on by KitchenAid – it is the 10,000 cupcake challenge.

Before I get to the details of this great campaign, I have invited my husband to share his thoughts on the topic. My mother in law was diagnosed with breast cancer a little over two years ago, and it was a very difficult time for our entire family. Fortunately it was caught early and she is now cancer free. That said, it really brought it close to home for us, and my husband wants to share how he felt when he found out that his mother had cancer. These are his thoughts:

“I will never forget how I felt the first time my mom told me that she may have cancer. She had told our whole family that there was something abnormal in her mammogram and that she had to go in for additional testing. She tried to reassure us that it was probably nothing, but I couldn’t help but feel extremely worried. I had seen what cancer does to people and how it can take peoples’ loved ones away with little to no warning. I couldn’t at that time, or now, imagine my life without my mom. This sweet, wonderful woman who sacrificed so much by raising my five siblings and me is one of the most important people in my life. I could barely sleep the entire week before she was going to find out the results. I tried to convince myself that the results were going to come back negative and we would be able to move on. Unfortunately that was not the case. We were all at my parents’ house on that Friday afternoon waiting to see if the doctor would call. When he finally did, I could tell from my mom’s face that the news was not good. After she hung up she told that she did in fact have breast cancer. When I heard those words, I felt like my whole body went numb – I immediately started crying and hugging my mom. After those first few moments, we started doing some research online and were encouraged to find out that she had a very early stage of breast cancer that had a very high rate of complete recovery. We are so grateful for the treatments that exist and that their are screenings available to catch this horrible disease at early stages. I am grateful that my sisters now know that they will have to be screened earlier as well. My grandma also had breast cancer and was cured, and I am so grateful that my mom is now cancer free as well.  If there is one good thing that came from this experience, it was that I now appreciate my mom even more than I did in the past. I am so grateful that we live close enough to see her and my dad on a regular basis, and I truly hope that the day comes when no family has to go through a similar, or worse experience.” 

I too am grateful that my mother-in-law is now cancer free, but I know that there are so many other people who are not as fortunate. That is why it is so important to continue searching for a cure so that cancer becomes a thing of the past! There are so many ways that all of us can contribute to finding the cure. That is why today I am sharing this recipe for Strawberry Cream Cupcakes. These have a nice pink color to them just so that every time someone sees them, it can remind them of the great cause that they are supporting.

 We made these at my in-laws’ house this weekend, and we all enjoyed them so much. They were really easy to make with our KitchenAid stand mixer and they providing a perfect ending to a great day of being together as a family. Strawberry Cream Cupcakes + 10,000 Cupcake Challenge

Ingredients

For the Cupcakes

  • 1.5 Cups of All Purpose Flour
  • 1/4 teaspoon of salt
  • 1/4 teaspoon of baking soda
  • 3/4 teaspoon of baking powder
  • 1/2 cup of room temperature butter
  • 3/4 cup of granulated sugar
  • 1-2 drops of red or pink food coloring.
  • 2 eggs
  • 3/4 cup of buttermilk
  • 1/2 teaspoon of vanilla or almond extract

For the Strawberry Cream Frosting

  • 2.5 cups of heavy whipping cream
  • 1/4 cups of strawberry milk powder
  • 3/4 cups of powdered sugar
  • 1/2 cup of dry instant pudding strawberry flavor, vanilla flavor, or strawberries and cream if you can find it.

Instructions

For the Cupcakes

  • Preheat your oven to 350
  • Mix the dry ingredients together in a bowl and set aside.
  • Cream the butter together with the sugar in a stand mixer until smooth.
  • Add the food coloring and then the eggs, one at a time, mixing between each addition.
  • Beat in the vanilla or almond extract.
  • Divide the dry ingredients into three parts and add one at a time, alternating with the buttermilk and mixing between each addition until you have added all of both ingredients.
  • Add the batter into 12 cupcake tins, previously prepared with liners, and bake for 15 minutes, or until a toothpick comes out clean.

For the Strawberries and Cream frosting

  • Put your mixing bowl and mixers into the freezer or refrigerator about 15 minutes prior to beginning.
  • Add all of the ingredients to a stand mixer and beat for about 3-4 minutes, or until stiff peak form.
  • Top the cupcakes with the frosting, add sprinkles if desired, and serve!
