Mexican Style Machaca Eggs (Great for Breakfast Burritos)

Ingredients

  • Roast beef cooked and shredded
  • 5 eggs lightly beaten
  • 1 to mato chopped
  • 1 jalapeno chopped
  • 1/4 onion chopped
  • Salt and Pepper to Taste
  • Flour tortillas beans, and fresh salsa to accompany.

Instructions

  • Heat up the shredded beef in a skillet with a small amount of olive oil until slightly dried;
  • Add all of the vegetable and cook for a few minutes;
  • Add the eggs and scramble everything together;
  • Season with salt and pepper.
  • Serve with flour tortillas, beans, and salsa or as a breakfast burrito.
