Mexican Style Machaca Eggs (Great for Breakfast Burritos)
- Roast beef cooked and shredded
- 5 eggs lightly beaten
- 1 to mato chopped
- 1 jalapeno chopped
- 1/4 onion chopped
- Salt and Pepper to Taste
- Flour tortillas beans, and fresh salsa to accompany.
Heat up the shredded beef in a skillet with a small amount of olive oil until slightly dried;
Add all of the vegetable and cook for a few minutes;
Add the eggs and scramble everything together;
Season with salt and pepper.
Serve with flour tortillas, beans, and salsa or as a breakfast burrito.
