Amazing Olive Garden Zuppa Toscana Copycat Recipe

Ingredients

  • 1 Pound of Ground Italian Sausage
  • 6 Slices of thick cut bacon diced
  • 1/2 large white onion diced
  • 2 cloves of garlic finely chopped
  • 4 cups of chicken stock
  • 2 cups of water
  • 1 cup of heavy whipping cream
  • 1 cup of half and half
  • 2 cups of kale
  • 6 medium potatoes cut into cubes
  • 2 tablespoons of butter
  • 1 tablespoon of sugar
  • 1/2 cup of Parmesan cheese + additional Parmesan cheese to sprinkle on top at the end
  • Salt and pepper to taste

Instructions

  • Brown the Italian sausage, drain grease, and set aside.
  • In a large pot, Cook the bacon with the onion, butter, and garlic until the onion is translucent.
  • Add the water, the chicken stock, the potatoes, the sugar, the salt and pepper and bring to a boil.
  • Add the sausage and cover and continue cooking over medium heat until the potatoes are soft.
  • Add the kale, the Parmesan cheese, the heavy whipping cream, and half and half and continue cooking for 15 minutes.
  • Add salt and pepper to taste and serve hot.
