Three Cheese Lasagna Rollups

Ingredients

  • 1 Package of Lasagna cooked according to package instructions.
  • 1 Pound of ground beef
  • 1/2 onion finely chopped
  • 2 cloves of garlic finely chopped
  • 3 roma tomatoes diced
  • 1/4 cup of fresh parsley finely chopped
  • 1/4 cup of fresh basil finely chopped
  • 1/4 cup of fresh oregano finely chopped
  • 1 cup of tomato paste o 1 can of tomato sauce
  • salt and pepper to taste
  • Chopped spinach optional
  • 1 15 oz package of Ricotta cheese
  • 1.5 cups of shredded mozzarella cheese
  • 1.5 cups of shredded Parmesan cheese
  • 1/4 cup of additional fresh parsley finely chopped.

Instructions

  • Preheat oven to 375 degrees Fahrenheit.
  • Stretch the individual pieces of pasta out on a baking sheet.
  • Cook the meat in a hot frying pan with olive oil and when it is almost all the way cooked through, add the garlic, onion, tomato paste (or sauce), parsley, basil, and oregano.
  • Season with salt and pepper and let simmer for 10 minutes.
  • In a large bowl, combine the three cheeses and the parsley and mix well.
  • Spread the cheese mixture along the length of each piece of pasta.
  • Add the meat on top of the cheese mix.
  • Add the spinach (if using) on top of the meat.
  • Roll each piece of pasta up and put in a pre-greased glass baking dish.
  • Add the remaining meat sauce on top and top with additional Parmesan and Mozzarella cheese.
  • Bake for 30 minutes and eat hot.
