Smoked Pork Taquitos smothered in Salsa Verde

Make these delicious smoked pork taquitos for lunch or any other meal. They are delicious, easy to make and are finished off with an amazing homemade salsa verde.

Ingredients

  • 10 Corn Tortillas
  • 1 lb smoked pulled pork or any other pulled pork
  • 10 tomatillos roasted
  • 1/2 white onion roasted
  • 1/4 white onion sliced
  • 1 clove garlic roasted
  • 1/2 bunch cilantro
  • 1 cup chicken stock
  • 1 tsp salt
  • 1 tsp pepper
  • queso fresco or other cheese
  • crema
  • Canola Oil for frying

Instructions

  • Heat up the tortillas so that they are pliable
  • Fill each tortilla with the pulled pork and roll up, using a toothpick to keep them together.
  • Fry the taquitos in the oil and let the excess oil drain on paper towels, set aside.
  • Combine the rest of the ingredients except for the crema and the queso in a blender and blend until smooth.
  • Add the salsa to a frying pan with a teaspoon of oil and the sliced onions and cook over medium heat for approximately 10 minutes.
  • Add the salsa to the plate and top with the taquitos or just smother the taquitos with the salsa and top with crema and queso.
