Mexican Style Ribs (Pressure Cooker Method)

 Learn how to make these delicious spare ribs that are bathed in a delicious guajillo pepper salsa in a pressure cooker. It can be done in less than thirty minutes and is so tasty!

Ingredients

  • 1 Rack Pork Spare Ribs Cut into individual pieces
  • 1 tbsp salt
  • 1 tbsp pepper
  • 3 tbsp oil for searing the ribs

For the Sauce

  • 3 guajillo peppers deseeded
  • 1 ancho pepper deseeded
  • 4 roma tomatoes roasted
  • 4 cloves garlic
  • 1/4 onion sliced
  • 1 1/2 cup chicken stock
  • 1/4 cup orange juice
  • 1 tbsp salt
  • 1.5 tbsp apple cider vinegar
  • 1/4 cup water
  • 1 tbsp paprika
  • 1 tbsp oregano
  • 1 tbsp thyme
  • 2 bay leaves
  • 1 cinnamon stick

Instructions

For the Sauce

  • Start by sauteeing the peppers with a little bit of oil until they are slighly browned. Then add to boiling water to rehydrate them completely. Set aside.
  • Add a bit more oil to the frying pan and add the onion, garlic and spcies except for the paprika. Sautee for about 3-5 minutes.
  • Add all of the ingredients to a blender and blend well.
  • Strain the resulting liquid and set aside.

For the Ribs

  • Season the ribs with salt and pepper
  • Add to the pressure cooker and sear with the oil over high heat.
  • Remove excess oil.
  • Add the sauce from above to the pressure cooker pot and ensure that there is enough liquid to cover the ribs. If not, add a bit more water.
  • Close the pressure cooker and ensure that it is sealed.
  • Keep the stove on high to medium-high heat until the pressure cooker is pressurized (see the instructions of your particular pressure cooker) and then reduce the heat to medium-low.
  • If your pressure cooker has a high setting, continue cooking on high for 15 minutes (as adjuste for altitude using 5% rule)
  • After cooking time is complete, de-pressurize the pressure cooker (see instructions on your pressure cooker) and then remove the lid.
  • Serve with rice or other side dish.

Notes

The 5% rule is that for every 1,000 feet above sea level after the first 2,000 feet, you should add 5% to the cooking time.
