- 4 chicken thighs boneless skinless
- oil for frying
For the Marinade
- 1 cup heavy cream
- 1 tbsp lime juice
- 1 tsp black pepper
- 1 tsp salt
- 1 tbsp smoked paprika
- 1/2 tsp cayenne pepper
- 1 tsp garlic powder
- 1 tsp onion powder
For the flour dredge
- 1 1/2 cup all purpose flour
- 1 tbsp smoked paprika
- 1/2 tsp cayenne pepper
- 1 tsp salt
- 1 tsp black pepper
- 1 tsp oregano
- 1 tsp garlic powder
- 1 tsp onion powder
For the Nashville hot sauce
- 1 Cup cooking oil from fried chicken
- 1 1/2 tbsp brown sugar
- 1/2 tsp cayenne pepper
- 1 tsp smoked paprika
- 1 tsp black pepper
- 1 tsp salt
- 1 tsp onion powder
- 1 tsp garlic powder
For sandwich
- 4 brioche buns
- iceberg lettuce
- 2 tbsp spicy mayo mayo + hot sauce
- pickles
Start by trimming some of the fat from the chicken thighs.
Cut the chicken thighs into the size you want for your chicken sandwiches and pound to a uniform thickness.
Marinade the chicken in the heavy cream or buttermilk mixture for 30 minutes to 4 hours in a bowl covered with plastic wrap.
Double dip each thigh into the dredge and then place on a baking sheet lined with aluminum foil and with a cooling rack on top.
Fry each piece of chicken for 5 minutes on each side.
Drizzle the Nashville hot sauce over each piece of chicken.
Form the sandwich by adding the spicy mayo to the toasted bun, and then layering the chicken, lettuce, and pickles
