Italian Pasta Salad

Ingredients

For the Pasta Salad

  • 1 Package of colored Rotini
  • 2 to matoes diced
  • 1 cucumber diced and de-seeded
  • 1/2 package of hard salami this can be replaced with pepperoni if desired
  • 1 stalk of celery diced
  • Mozzarella cheese cut into cubes
  • 1/2 cup of black olives sliced
  • 1 t of paprika or chili powder
  • 1 T of sesame seeds
  • 1 t of black pepper
  • 1 t of celery flakes
  • 1 t of garlic powder
  • Salt to taste

For the Italian Dressing

  • 2 T of Italian seasoning you can make you own with oregano, marjoram, basil, and parsley
  • 1/3 cup of white wine vinegar
  • 2 T de red whine vinegar
  • 1 clove of garlic finely chopped
  • 2 T of onion finely chopped
  • 2 T of red pepper finely chopped
  • 1 T of honey
  • 1 t of red pepper flakes or more if you like more spice
  • 2/3 cup of olive oil + 1/3 cup of canola oil
  • Salt and pepper to taste

Instructions

  • Cook the pasta according to package instruction. Once cooked, rinse with cool water.
  • Combine all of the pasta salad ingredients in a large bowl, and mix well.
  • To make the dressing, add all of the ingredients to a salad dressing shaker and mix well (you can also just stir in a small bowl). Refrigerate.
  • Add half of the dressing and refrigerate for at least one hour. Once cool,serve with the remaining dressing.
