Begin by making whipped cream. Add the cup of heavy whipping cream to a bowl or a stand mixer, add the powdered sugar and vanilla, and beat until it reaches your desired consistency.
Put a layer of whipped cream on a large plate or platter.
Add a layer of ice cream sandwiches, and top with a layer of whipped cream.
Repeat for two more layers and then cover the entire cake with the remaining whipped cream.
Crush up the chocolate sandwich cookies and cover the outside of the cake.
Decorate with chocolate syrup if desired and freeze for at least 1-2 hours.
Remove 15 minutes prior to serving.
