Season the tilapia filets with salt, pepper, and cumin.
Fry the filets in 1/4 cup of hot oil and set aside.
Add the garlic and onion to the same pan where you fried the tilapia and cook until translucent.
Add the diced tomatoes, the green and yellow peppers, the green olives, the capers, and the herbs and saute for 2-3 minutes.
In a blender, blend the KnorrĀ® Bouillon with the two boiled tomatoes and 1/4 cup of water.
Add the above to the vegetables and herbs and mix well.
Add salt and pepper to taste if necessary.
Add the fried tilapia and let boil for about 5 minutes.
Serve with rice.
