This fresh and easy mango and cucumber salsa goes well with so many meals or just with homemade tortilla chips.

Ingredients

  • 2 Mangoes cut into cubes
  • 1/4 red onion diced
  • 1 Cucumber cut into cubes
  • 1/2 bunch of cilantro chopped
  • 1 red bell pepper diced

For the dressing

  • Juice from 1 large lime
  • 1 tablespoon of avocado oil
  • Salt and Pepper to taste
  • 1 teaspoon of honey
  • 1 tablespoon of red pepper flakes

Instructions

  • Combined all of the fruit and vegetables in a large bowl and mix well.
  • Whisk together all of the dressing ingredients.
  • Pour the dressing over the fruit and vegetables and mix well.
