Fresh and Easy Mango and Cucumber Salsa
This fresh and easy mango and cucumber salsa goes well with so many meals or just with homemade tortilla chips.
Servings 2 Cups
- 2 Mangoes cut into cubes
- 1/4 red onion diced
- 1 Cucumber cut into cubes
- 1/2 bunch of cilantro chopped
- 1 red bell pepper diced
For the dressing
- Juice from 1 large lime
- 1 tablespoon of avocado oil
- Salt and Pepper to taste
- 1 teaspoon of honey
- 1 tablespoon of red pepper flakes
Combined all of the fruit and vegetables in a large bowl and mix well.
Whisk together all of the dressing ingredients.
Pour the dressing over the fruit and vegetables and mix well.
