This apple stuffed pork chops recipe is a great option for the weeknight when you need a great meal in not a lot of time.

Apple Stuffed Pork Chops Recipe

Ingredients

For the Marinade

  • ½ Cup of agave
  • ¼ cup of apple juice
  • 1 tablespoon curry powder
  • 1 tablespoon of oregano
  • 1 tablespoon de black pepper
  • 2 tablespoons of apple cider vinegar
  • ¡For the Filling
  • 1.5 Green Apple cut into small cubes
  • ¼ red onion finely chopped
  • Parsley finely chopped
  • Green onions finely chopped
  • 2 celery sticks finely chopped
  • 3 tablespoons of butter
  • ½ teaspoon nutmeg
  • 1/3 cup of brown sugar
  • Zest from 1 Lime

For the Pork Chop

  • Apple Slices
  • 1/3 cup of brown sugar

Instructions

For the marinade

  • Combine all of the marinade ingredients and marinate the pork for up to an hour (or you can just quickly marinate them for a couple of minutes to get the flavor on there).

For the filling

  • Saute all of the ingredients in butter until cooked through and soft.

For the Pork Chops

  • Cut open a "pocket" in the pork chop that will allow you to add the filling.
  • Fill with the filling and then place in an oven safe dish.
  • Top with a slice of apple and some extra brown sugar.
  • Bake at 375 degrees for 20 minutes and enjoy!
