I love everything about the Holiday season – from the parties, to the lights, to the food. There is always just something different in the air this time of year, and I love it! Growing up in Mexico, we definitely had different traditions around this time of year, but they were just as memorable and just as amazing! One thing that the traditions in Mexico and those here in the United States have in common is that there is always lots of great food. I especially love all of the great desserts that everyone makes for the holidays.

One of my favorite memories from this time of year when I was growing up in Mexico was spending hours on end in the kitchen with my abuelita baking cookies and making other food to share with everyone. She was one the greatest cooks that I know and pretty much everything I know about cooking and baking I learned from her. She passed away a little over a year after I moved to the United States, and that was such a difficult time for me! I miss spending time with her and all the times we spent cooking together.

Fortunately I have an amazing family here in the United States, and I love spending time baking and cooking with my mother-in-law! She has so many great recipes and we know that there will always be delicious baked goods when we go to her house. One of the first cookie recipes that she taught me were peanut butter blossom cookies. I had never heard of anything like that, so I was very curious! After trying them, and seeing how easy they are to make, they became one of my Holiday go-to recipes.

That is what inspired this recipe that I am sharing today – the times spent cooking with my abuela and now the time that I spend with my mother-in-law. This isn’t exactly the same as her recipe, but they are pretty close. I decided to add a drizzle of white chocolate to give it a more festive touch, and they turned out great.

 To make this recipe, I started with the C&H® Sugar’s 1001 Cookie Starter recipe. This is a mix that allows you to make dozens of different types of cookies.  You can make a lot of this mix at the same time. It’s great because you can use it right away to make your cookies, or you can save it for later. The starter recipe makes 10 cups of mix, which you can then use in a huge variety of cookie recipes. After making a batch of the 1001 Cookie Starter recipe, I added 3 cups of it to a stand mixer and then added the following ingredients:

  1. 1/4 cup of C&H® Golden Brown Sugar
  2. 3/4 cup of creamy peanut butter
  3. 1 large egg
  4. 2 Teaspoons of Cinnamon (My abuela loved adding cinnamon to baked goods, so that is why I decided to add this).

You will also need about 1/2 Cup of additional C&H® Granulated Sugar to roll the cookies in before baking.

 After I mixed this together and I had a large ball of dough, I formed small (1/2 inch) balls by rolling them between my hands. I then rolled them in additional C&H® Granulated Sugar and put them on a prepared pan.

The next step was baking them at 375º for 14 minutes. Immediately after taking them out of the oven, I added one piece of chocolate to each, pushing down gently and then letting cool completely on a cooling rack.

 After the cookies cooled completely, I melted some white chocolate, put it in a plastic bag and cut an opening in the corner so that I could drizzle it over the cookies. Be sure to put a sheet of aluminum paper under the cooling rack so that you don’t get the countertop messy.

 These turned out so great and are perfect to give as gifts for friends, co-workers and family. I know that my family definitely liked them and I hope that you will too!

White Chocolate and Cherry Sugar Cookies

Ingredients

  • 3 Cups of C&H® Sugar 1001 Cookie Starter Mix
  • 1/4 Cup of C&H® Brown Sugar
  • 2 Teaspoons of cinnamon powder
  • 1 Egg lightly beat
  • 3/4 Cup of Creamy Peanut Butter
  • 1/2 cup of additional C&H® Sugar for rolling
  • 1 bag of chocolates to put on top
  • 1 bag of white chocolate for melting

Instructions

  • Preheat Oven to 375
  • Combine all of the ingredients (except the white chocolate, chocolates, and 1/2 cup of additional sugar) in a stand mixer and mix until a dough forms.
  • Form 1/2 inch balls of the dough and roll in the additional sugar.
  • Placed on a baking sheet and bake for 10-14 minutes.
  • Immediately after removing the cookies from the oven, put on piece of chocolate on each, pushing down gently.
  • Remove to a cooling rack and let cool completely.
  • Melt the white chocolate and put in a plastic bag, and cut off the corner.
  • Drizzle the white chocolate over the cookies and let cool.
