Inside: Learn how to make Huevos Motuleños, one of the most delicious authentic Mexican breakfasts around.
I am so excited to share another authentic Mexican breakfast recipe with you all today. I have mentioned previously that breakfast is such an important part of Mexican culture. There are so many great options, and one of those is this recipe for Huevos Motuleños.
One of the great things about this particular recipe is that you can make it in about 20 minutes, which is made easier by using Smithfield Anytime Favorites Ham Steak.
With the school year starting, I am always trying to make sure that we have a variety of breakfast options for my kids. Not only do they have to be delicious, but they need to be fast and easy to make on busy mornings.
While it can be tempting just to give my kids cereal before school, I know that it is important that they have a tasty, protein-packed meal so that they can perform better. Studies actually show that when kids have a hearty and wholesome breakfast in the morning, they are more likely to attend school and perform better on standardized tests.
With two kids in school now, I know how important it is for kids to eat a well-balanced diet. That is why I was excited to hear that Smithfield is partnering with No Kid Hungry for a second year in a row. They are doubling their donation this year to two million meals to support the organization’s in-school breakfast programs in order to help the 1 in 6 American children struggling with hunger.
Smithfield is encouraging others to get involved and help provide meals to kids in need. When you make a Smithfield breakfast, share a photo of it on Facebook, Instagram and Twitter using #BreakfastPower and for every post shared, Smithfield will donate enough for 10 meals to No Kid Hungry,
What Are Huevos Motulenos?
Huevos Motulenos come from a city in the Mexican state of Yucatan called Motul. It is a very hearty and delicious recipe that can be modified according to your individual tastes.
The basic recipe consists of two fried tortillas, topped with refried beans, ham, fried eggs and salsa roja with peas. I like to spice mine up a little bit with some chopped jalapenos, but that is definitely optional.
What really gives this version a distinct flavor is the Smithfield Anytime Favorites Ham Steak, which I love to grill slightly before putting it right on top of the refried beans. This is a great way to add some delicious hickory smoked flavor to this dish and ensure that it is filling.
Smithfield Anytime Favorites are definitely one of my go-to products when I want to add some delicious ham to any of my recipes. They come in 20 different cuts, including sliced, diced, chopped, and steaks. I used the ham steaks for this recipe, but any of the other cuts would be great as well. You can find it at your local grocery store.
This is a great authentic Mexican recipe that anyone can make. I remember eating this often when I was a young girl growing up in Mexico, and I like to serve it to my children now as well. It allows me to teach my boys a little bit about Mexico, and to teach them why eating a hearty breakfast is so important.
