One of the great things about this particular recipe is that you can make it in about 20 minutes, which is made easier by using Smithfield Anytime Favorites Ham Steak.

With the school year starting, I am always trying to make sure that we have a variety of breakfast options for my kids. Huevos Motulenos come from a city in the Mexican state of Yucatan called Motul. It is a very hearty and delicious recipe that can be modified according to your individual tastes. The basic recipe consists of two fried tortillas, topped with refried beans, ham, fried eggs and salsa roja with peas. I like to spice mine up a little bit with some chopped jalapenos, but that is definitely optional.

What really gives this version a distinct flavor is the Smithfield Anytime Favorites Ham Steak, which I love to grill slightly before putting it right on top of the refried beans. This is a great way to add some delicious hickory smoked flavor to this dish and ensure that it is filling.

Smithfield Anytime Favorites are definitely one of my go-to products when I want to add some delicious ham to any of my recipes. They come in 20 different cuts, including sliced, diced, chopped, and steaks. I used the ham steaks for this recipe, but any of the other cuts would be great as well. You can find it at your local grocery store.

This is a great authentic Mexican recipe that anyone can make. I remember eating this often when I was a young girl growing up in Mexico, and I like to serve it to my children now as well. It allows me to teach my boys a little bit about Mexico, and to teach them why eating a hearty breakfast is so important.

Ingredients

  • 4 Smithfield Anytime Favorites Ham Steaks
  • 8 Corn Tortillas Fried
  • 8 Eggs large, cooked over easy or hard
  • 1 Cup Refried Black Beans
  • 1/2 Cup Salsa Roja
  • 1 Cup Peas
  • 1/2 Cup Queso Fresco
  • 1/2 Cup Jalapenos Sliced
  • 1/2 bunch cilantro chopped

Instructions

  • Place two fried tortillas on a plate and spread the refried beans onto each.
  • Grill the Smithfield Anytime Favorites Ham Steaks until slightly browned and add on top of the beans.
  • Add the eggs on top of the Smithfield Anytime Favorites ham steaks.
  • Add the peas to the salsa roja and stir briefly.
  • Add the salsa roja with the peas on top of the eggs.
  • Top with jalapeno slices, cilantro, and queso fresco.
  • Serve Immediately.
