This time of the year is definitely my favorite. I love everything about the Christmas season – from the lights to the cooler weather to the time I get to spend with family. Another thing that I love about Christmas is all of the great food that we get to try. I have lived in the United States for about seven years now, and I have to say that there is a big difference between the traditional Christmas and holiday meals of Mexico and those of the United States. While that may be true, it is also true that both countries have some amazing Christmas traditions and recipes!

One of my favorite meals from the Christmas season in Mexico is Bacalao a la Vizcaina. Bacalao is the Spanish word for cod, which is a delicious fish commonly consumed in Mexico. This way of serving cod is delicious and very popular around Christmas time. Unfortunately, in Mexico cod can sometimes be too expensive for many families. That is why over time people began to replace the cod with tuna – another delicious (and more affordable) fish. The version that is made with tuna is the one that I want to share today.

Vizcaina-style tuna (or cod) is very versatile and most people eat it either with tostadas or on a freshly baked French baguette. Today, however, I want to share a different way to serve it using another delicious Mexican staple – avocados. If you know me, you know that I love everything about avocados. I love that they are always in season, that they can be used in so many different recipes, and that they are always fresh. I love that I can always go to my local Walmart and find delicious Avocados From Mexico. For this recipe, I found some perfectly ripe (but still somewhat firm) avocados. I pitted them and filled them with the Vizcaina-style tuna mixture. The fresh, creamy flavor of the avocados went perfectly with the slightly salty flavor of the tuna. It was a perfect combination and one that I will definitely be serving at Christmas parties this year!

To make Vizcaina-style tuna, you will combine some amazing and fresh ingredients such as green olives, parsley, onions, and tomatoes. You also will use diced red peppers and tomato sauce to bring it all together.

This is seriously such an easy recipe to make. It may not seem like a traditional Christmas recipe for many people here in the United States, but if you decide to make it for a Christmas party, I guarantee that it will be a hit.

Vizcaina Style Tuna Stuffed Avocados

Ingredients

  • 2 Large Hass Avocados From Mexico
  • 1-2 8- ounce cans of tuna
  • 1 red pepper diced
  • 1 onion diced
  • 1 bunch of parsley diced
  • 2 Roma tomatoes diced
  • 1 cup of green olives
  • 1 cup of tomato sauce
  • Salt and pepper to taste

Instructions

  • Combine the tuna and all of the ingredients except for the tomato sauce in a large skillet over medium heat.
  • When the vegetables and tuna have cooked down, add the tomato sauce and cook for another 5 minutes.
  • Add salt and pepper to rectify the flavor.
  • Slice the avocados in half and remove the pits.
  • Fill each avocado half with the Vizcaina-style tuna mixture and enjoy!
