<p><span style="font-size: 14pt;">Sloppy Joes are similar to a type of food that we have in Mexico, called picadillo. One main difference is that picadillo is made with diced potatoes and peas, whereas Sloppy Joes are sweeter and can include a variety of veggies to make it more healthy.</span></p>
<p><span style="font-size: 14pt;">In Mexico, we tend to eat picadillo with tortillas or tostadas. Sloppy joes, on the other hand, are prepared as a sandwich and are often served with potato chips or other side dishes. In any case, sloppy joes are a fast, easy, and delicious meal that everyone seems to love.&nbsp;</span></p>
<p><span style="font-size: 14pt;">This sloppy joes recipe is similar in concept to many other recipes that you can find online, but it is different as well because I love to add fresh vegetables and spices, and of course, being from Mexico, I like to add my own spicy touch by including some chipotle salsa.&nbsp;</span></p>

<p><span style="font-size: 14pt;">Cinco de Mayo festivities are almost here! In celebration of that, I want to share a recipe with you today that uses a very Mexican ingredient &ndash; Jicama. </span></p>
<p><span style="font-size: 14pt;">This recipe is perfect for the sunny days that are on their way &ndash; it is fresh, crunchy, healthy, and delicious. You can use it as a side dish for pretty much any dish, as a standalone meal, or as a topping for these delicious <span style="text-decoration: underline; color: #0000ff;"><strong><a style="color: #0000ff; text-decoration: underline;" href="https://www.mylatinatable.com/fried-avocado-fish-tacos-chipotle-sauce/" data-wpel-link="internal">fish tacos</a></strong></span>.&nbsp;</span></p>
<p><span style="font-size: 14pt;">Jicama looks somewhat like an onion, but it is much larger and the taste is much different as well. It is juicy, crunchy, and sweet. In Mexico, we tend to eat it raw with lime, salt, and chili powder. </span></p>
<p><span style="font-size: 14pt;">You can find it pretty much anywhere in Mexico, including as part of many kids&rsquo; lunches cut into thin strips and combined with mango and cucumber. These are great school snacks!</span></p>

<p><span style="font-size: 14pt;">Because of its high water content, jicama is perfect to enjoy on a sunny day. That would definitely explain why it is consumed so frequently in Mexico, seeing as how there are very few places in Mexico that are not hot most of the time. </span></p>
<p><span style="font-size: 14pt;">Another good thing about it is that it is high in Vitamin C and and it combines perfectly with other healthy ingredients such as carrots, onions, and cilantro. It goes really well as a side dish with all of your grilling favorites. </span></p>
<p><span style="font-size: 14pt;">At the same time, you can just serve it as a salad for lunch and I know you will be satisfied.</span></p>

<p><span style="font-size: 14pt;">Jicama is one of the principal ingredients in this jicama and cucumber slaw. For this recipe, I included a sweet and spicy dressing, with just a bit of spiciness. Of course, you can omit the spicy ingredients if you aren&rsquo;t into it. </span></p>
<p><span style="font-size: 14pt;">It is also important to note that you can eat jicama cooked or raw, and even grilled along with some delicious nopales &ndash; but that will be a recipe for a different day.</span></p>

<p><span style="font-size: 14pt;">This chicken gyros recipe is fresh, delicious, and easy to make. I have to say that gyros have quickly become one of my favorite Greek foods. They are easy for my husband to take to work and to eat for lunch any time.</span></p>
<p><span style="font-size: 14pt;">One of the great blessings of living in the United States is the diversity all around us &ndash; specifically the diversity in language, culture, and food! I have even tried food from my home country (Mexico) that I never even tried when I was living there. Of course I have also enjoyed learning about new foods from other places as well.</span></p>

I like to add a little bit of lemon and pepper as well before letting it chill in the refrigerator while I am marinating the chicken. </span></p>

<p>As a proud Latina and someone who grew up eating (even picking!) fresh avocados, I think I have more than the average level of expertise when it comes to avocados. Sure, we all know they are delicious (and once you try my recipe for creamy avocado salsa, you&rsquo;ll have another reason to buy more) but let&rsquo;s talk more about why avocados are so healthy for us. Some of these benefits you might have heard about, others could be news to you. Next time you reach for a fresh avocado, put on an extra big smile on your face because:</p>
<ul>
<li><strong>Fresh avocados provide naturally good fats</strong>. This is really important to me, because I always want to make sure that my family is eating healthy and while we all need fats to help us absorb nutrients, good fats is a better choice than bad fats. Did you know that avocados are virtually the only fruit with good fats? Just one of many reasons to eat them as often as possible.</li>
<li><strong>Avocados are a heart-healthy nutrient-rich fruit</strong>. While many factors affect heart disease, eating avocados as part of a diet low in saturated fat and cholesterol may reduce the risk. I love to cut up fresh avocados and add them to salads with other healthy fruits and vegetables to maximize this benefit. Eating a variety of fruits and vegetables may help you control your weight, cholesterol and blood pressure.</li>
<li><strong>Avocados are a good source of fiber</strong>. This is important, because diets rich in healthy foods containing fiber, such as avocados, may reduce the risk of heart disease, obesity, and type 2 diabetes. My grandmother suffered and ended up passing away from diabetes. Anything that I can do to prevent that from happening to me or anyone in my family is good in my book, and that is why I always have fresh avocados on hand.</li>
<li><strong>Avocados can act as a &ldquo;nutrient booster.&rdquo;</strong> This means that they can help the body to better absorb fat-soluble nutrients from foods that are eaten with the fruit. You can add avocados to so many great recipes, and it just makes it that much better!</li>
<li><strong>Avocados are sugar-free</strong>. It&rsquo;s good to remember that avocados have the least amount of sugar per serving than any other fresh fruit. They go great in smoothies and other desserts because they add a creamy component without overloading your drink with sugar. One smoothie that I like includes avocado, mango, blueberry, kale, lemon juice, and flax seed. You have to try it!</li>
</ul>

<p>My creamy salsa avocado recipe uses fresh avocados and adds jalape&ntilde;os too for a nice kick. I especially love eating it with my eggs in the morning, but you can put it on salads and more.</p>

<p>Last night, my husband ate it with one of our favorite weeknight meals &ndash; <a href="https://www.mylatinatable.com/sheet-pan-flank-steak-garlic-roasted-potatoes/" data-wpel-link="internal"><strong>sheet pan flank steak with roasted potatoes</strong></a> &ndash; and he loved it!</p>
<p>Whenever I make this creamy avocado salsa, I store it in a large plastic bottle made especially for dressings and sauces. This makes it really easy to serve and store and is very convenient.</p>

<p>In some of my previous posts I have mentioned that I grew up on my grandparents ranch in Mexico. I loved growing up there because there was always so much to do &ndash; from picking mangoes and avocados, to riding horses, and even to milking cows. My grandpa had so many different animals &ndash; cows, chickens, pigs, goats, and more.</p>

<p>As a result, there was never any shortage of fresh eggs, meat, and best of all milk. I grew up drinking milk every day and I still love it today. Milk is one of the original farm-to-table products. Growing up in Mexico it went from farm to table very quickly since we lived on the farm &ndash; but even now living in a big city, milk usually goes from the farm to grocery store within 48 hours.</p>

<p>I am also trying to teach my little boys to love milk as much as I do. My two oldest boys ask for milk all the time, and I feel confident giving it to them. I know that it is a great way to give them the nutrition that they need. They are happy to just drink it plain, but I also try to switch it up sometimes by giving them some delicious smoothies in the morning before school.</p>

<p>I love coming up with new smoothie varieties for my family to try. I try to include fruit, some type of seeds, and of course fresh, delicious milk. Today, I want to share with you all three different smoothies that my boys love and that I am sure you will too. You can always customize these based on your personal tastes, but these combinations have been a hit at my house.</p>

<p><span style="font-size: 14pt;">Shrimp ceviche is one of my favorite recipes from my hometown of Veracruz, Mexico. Veracruz is a port city located on the coast of the Gulf of Mexico. As a result, there is plenty of fresh seafood for anyone who likes it.</span></p>
<p><span style="font-size: 14pt;">For me, there is just about nothing better than a making a delicious shrimp ceviche with fresh ingredients during the summer. I always remember getting together on Sunday afternoons with my extended family and sharing fresh ceviche with freshly made tostadas.</span></p>
<p><span style="font-size: 14pt;">My siblings and I always went out to get the fresh shrimp and avocados from the market and those were some of my favorite memories. I love entertaining family and friends with this recipe now too!</span></p>
<h3><span style="text-decoration: underline;"><strong><span style="font-size: 18pt;">How Do You Prepare The Shrimp When Making Ceviche?</span></strong></span></h3>
<p><span style="font-size: 14pt;">One unique thing about making ceviche is that you don&rsquo;t actually cook the shrimp (or fish if you are making fish ceviche) in the traditional sense. </span></p>
<p><span style="font-size: 14pt;">Instead, you soak the shrimp in lemon juice for about an hour until they turn pink and are ready to eat.&nbsp;</span></p>
<p><span style="font-size: 14pt;">This is the traditional way of preparing the shrimp for most ceviche recipes, and the result is a fresh, delicious flavor that is irresistible.&nbsp;</span></p>
